It’s a new concept from New York native and longtime Phoenix area restaurateur Bobby Mancuso, most notably of Mancuso's at the Borgata for 23 years. Mancuso also owns Bobby's Restaurant and Jazz Lounge in Scottsdale, Arizona.

Located at CityCenter of City North, in Phoenix, The Skinny Italian Kitchen is open for lunch and dinner daily. The casual, comfortable and affordable restaurant features traditional Italian fare with healthy options. Many of the menu dishes are created from Mancuso's mother's recipes; others follow the principles of the Mediterranean Diet, acclaimed for its use vegetables, fruits, olive oils, whole grains and nuts. Vegetarian and Vegan dishes are also available; gluten-free and whole wheat pastas, tossed with wholesome sauces, round out the menu.
